Lentil Soup with Coconut Milk Recipe

Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 2 cups dried lentils, rinsed and drained
- 4 cups vegetable broth
- 1 can coconut milk
- 1 teaspoon cumin
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons fresh cilantro, chopped
- 2 tablespoons lime juice
Instructions:
- Heat the olive oil in a large pot over medium heat. Add the diced onion and minced garlic and sauté for 2-3 minutes until the onion is soft and translucent.
- Add the lentils and vegetable broth to the pot, then bring to a boil.
- Reduce the heat to low, cover the pot, and let the soup simmer for 25-30 minutes or until the lentils are tender.
- Add the coconut milk, cumin, paprika, salt, and black pepper to the pot, and stir to combine.
- Let the soup simmer for an additional 10-15 minutes until the flavors have melded together.
- Stir in the chopped cilantro and lime juice, and serve hot.
