I have started my carbs and sugar free journey this week, and it's been an exciting adventure so far. It's only been three days, but I am already feeling good, and I haven't had any cravings yet.

Living in Asia, where rice and noodles are a staple in most dishes, it can be challenging to avoid carbs. But, I have been determined to make this change and achieve a healthier lifestyle. I know I have to watch what I eat and balance it out to make sure I stay on track.

For my lunch today, I made a delicious salad that kept me full and satisfied. Here's the recipe:

Ingredients:

  • Mixed greens (spinach, arugula, and lettuce)

  • Grilled chicken breast

  • Avocado

  • Cherry tomatoes

  • Cucumber

  • Feta cheese

  • Olive oil

  • Balsamic vinegar

  • Salt and pepper

Instructions:

  1. Start by washing and drying the mixed greens, cherry tomatoes, and cucumber. Cut the cucumber and cherry tomatoes into bite-sized pieces.

  2. Grill the chicken breast until it's fully cooked. Cut it into small cubes.

  3. In a large bowl, add the mixed greens, cherry tomatoes, cucumber, and cubed chicken breast.

  4. Cut the avocado into small pieces and add them to the salad.

  5. Crumble the feta cheese on top of the salad.

  6. Drizzle olive oil and balsamic vinegar over the salad.

  7. Season with salt and pepper to taste.

This salad is low in carbs, high in protein, and healthy fats, making it a great meal to keep you feeling full and satisfied.
